What a fun shot! I would use a low iso like 100 for a full sun shot. Probably a lower apeture, the lweost your lens will go. Then I would adjust the shutter speed to match. Once your apeture and iso is picked leave them alone and just work with shutter. Take a test shot then adjust accordingly. The higher the shutter speed you can get to the better the shot. Lower shutter speeds tend to come out blurry. If your shutter ends up lower than 50 then go up to 200 or even 400 iso. You're doing great. When I learned how to shoot in full manual I tried to understand and master one thing at a time. ISO, then apeture and then finally shutter speed. The best part about digital is you can take hundreds of shots for practice and then throw them away.
