One of my sons' favorite lceuhns is fresh mozzarella, tomato and basil pasta. This recipe makes 6 lunch portions for school-aged children and is easy to prep all at once and divide into ready-to-go containers. 1 container of grape or cherry tomatoes (or about 1.5 cups chopped)10-12 fresh basil leaves1-2 cloves of fresh garlic1/2 cup olive oilSalt1 large ball of fresh mozzarella1 box of penne pastaPrepare penne per box instructions. While the pasta is cooking, quarter the tomatoes, chop the garlic and basil, and place in a small bowl. Add 1/2 cup of olive oil and salt to taste. Chop the mozzarella into small cubes and set aside. When the pasta is finished, drain and place into a large bowl. Pour the tomato, basil, garlic and oil over the pasta. Add mozzarella and season to taste. Some kids like oregano, additional garlic or more oil. It's great at room temperature which makes it perfect for lceuhns!
